Gluten Free Roasted Cauliflower Tacos

Every day I’m looking for new ways and improvised recipe ideas to help me stay healthy. I absolutely love cauliflower, but roasted is my favorite way. These roasted cauliflower tacos made with Siete Foods almond tortillas are a winner! Gluten free, low calorie and rich in flavor.

INGREDIENTS

  • Cauliflower

  • Organic curry powder

  • Kosher salt

  • Black pepper

  • Lime

  • Black beans

  • Red cabbage

  • Avocado

  • Serrano peppers

  • Almond tortillas

MY METHOD

Cut cauliflower into small pieces, add curry powder (as much or little as you like), kosher salt, black pepper, and the juice of one lime. Mix really well and bake for 40 minutes in a preheated 440 degree oven.

While the cauliflower is roasting, chop red cabbage finely, peel and dice avocado and chop serrano peppers.

Assemble as follow: Tortilla (previously headed on skillet), roasted cauliflower, black beans, red cabbage, avocado, serrano peppers and lime juice.
